LaBelle Winery is among the few New England wineries currently using the classic French technique known as Méthode Champenoise. New red, white and rosé sparkling wine varieties are being made and fermented in the building’s production area, located at the rear of the Tasting Barn located in Derry, New Hampshire.
After fermenting in barrels, sparkling wines created using Méthode Champenoise undergo a second fermentation in the bottle. Guests who visit the new facility will have the opportunity to learn about the process. The infographic I created will help provide a more in-depth view of the classic French method of making sparkling wine.
